In 2015, we had the pleasure of discovering Finca La Rafaela, located high in the Andes Mountains of Ecuador.
Finca La Rafaela, owned by Rosa Cotacachi, is located in the northwest area of the Imbabura province on the northern mountain range of the Andes along the Colombian border. This new coffee farm was established by Rosa Cotacachi in the last 5 years resulting in the harvestable area of coffee being expanded and cultivation improved. Proper harvesting techniques were taught to the pickers and the coffee now explodes with sweetness, developed from the slow growing cycle and the high altitude of the growing region.
Sugar is produced inside the coffee cherry as it is growing on the tree. At high elevations, such as Finca La Rafaelaâ€™s 7545 feet, the slow growing cycle and cool temperatures at night allow the coffee tree to store the sugars in the cherry which results in a highly desirable sweetness and acidity.
This coffee has intensely sweet notes of huckleberry, concord grape and cola providing a full body and lingering finish. Read More...
