One of two new Direct Trade coffees from Anny Pimentel. Her coffee grows on the slopes of the San Salvador Volcano with an elevation of 1400-1900 meters. This lot is 100% RED HONEYED Pacamara and is one of two exclusive honeyed lots we are bringing in from Anny this season. With a Honeyed processed coffee most of the meat of the coffee cherry is removed then the coffee is dried in parchment without fermentation. Depending on the amount of meat left on the cherry, and the thickness of the drying beds, the process is called either White, Yellow, Red, or Black. The “red” process allows more mucilage to dry on the parchment during processing.
Here is what Ken Davids had to say about this unique coffee: A fine coffee that is fine in unusual ways. A sweet, fragrant wood note dominates; we associated it most closely with sassafras. In and around it: vanilla, rose-like flowers, musk, a richly tart citrus (candied tangerine?). Tartly juicy acidity; full, syrupy mouthfeel.
